Can't agree with you more about Artorias (the content as a whole and the boss fight). The new expansions have similar experiences, especially the third one (Ivory King). Unique boss fights, intricate environments, etc. Although the story isn't quite as compelling as it was in "Artorias of the Abyss." Read more

I would start with Demon's Souls actually. It's the least polished of all three but the most atmospheric. Since it's more linear it's easier to tackle as a noob, and it will give you the training you'll need to not beat your head against the wall in DS1. Read more

The idea is that so much time has passed between DS1 and DS2 that the land has totally changed, kingdoms have risen and fallen where Lordran once stood, and naturally a lot has happened in that time.
