Block_Fortress has actually done quite a lot of similar stuff in the past, like this Skyrim dragon and this ultralisk. Their newest is this Minecraft version of the Ferelden Frostback from Dragon Age: Inquisition—it looks good in-game, but it really shines in renders:
Then again, you can see some cool little details going inside the map. The dragon's eyes, for example, are actually Redstone torches:
