I think you can play this without running into too much garbage. At the very least, I didn’t run into much. You can but that’s still a bit of a gamble if I recall. The game is pretty much always checking your sneak score against the NPC’s while you’re pickpocketing. That check is then augmented by the value of any item you’re stealing or dropping in their inventory.
