Can't say I agree with everything but I do see your points and you are bang on the fact that the franchise is crumbling under the weight of its mechanics.
I'm not sure if making a tough as nails zelda would make it better however. Maybe for you but I doubt it would sell as many copies or even get a sequel after that. At the end of the day a series must do the necessary fan service to be successful, I'm fairly sure even Zelda's director said so himself.

It is a common issue with most sequels and not related to the Zelda franchise itself.
