My neighbors got together last month and decided the entire neighborhood was going to have a rib cook-off Memorial Day weekend. Worse still, while I fancy myself a decent chef, I've never cooked a rib in my life and they all had.
So Thursday I did a little research and decided on making up a batch of Vietnamese babyback ribs. I crafted the marinade Friday night and soaked them until Saturday night when it was time to cook them. I spent the two hours they were on the fire moving them between the top, middle and bottom rack on my grill, tinkering with the heat, turning burners on and off... essentially, I had no clue what the hell was going on. I was convinced I had managed to both burn and under cook them but when the 40 or so people got to eating and voting turns out they liked mine best. That's right I managed to win the cook-off as a rib newb. I now love ribs.
